What's the difference between a riveted and a welded handle?
A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.
For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. I've tried all the aluminum non stick pans available on here, none come close to vollrath for a busy kitchen. This pan got updated in 2024, it used to have different handles(the ones with the 'cooling' holes). The new handle is good, in fact I'd say it's easier to flip eggs for a novice individual with this new handle.
I've been ordering these pans for 5 years at least, but now in 2024, they seem to have changed the formula for their non stick coating. Once the pan gets hot, eggs begin to stick without a ton of oil added. I didn't have this problem with the previous model. To adjust, I have to keep a pan on lower heat for over easy eggs, and one on higher heat for scrambled. This is kind of annoying in a busy kitchen.
