I purchased this knife with the sole intention of slicing up a good deal of brisket with it. I sat on the fence for several months about making the purchase but in the end I am nothing short of glad that I did. This knife works so well for slicing brisket that many weekends I find myself smoking brisket just so that I get to use this wonderful knife. The blade is super sharp and the length allows me to get a professional grade cut with every stroke. I highly recommend this slicing knife for anyone that finds themselves in need of one.

I've been using the 12" Victorinox Granton groove carving knife for about 9 years now. It's a great knife for the money. I use it when carving any meat that I want to slice into consistent thickness. I can't think of a better choice for the average kitchen to do this task. If you've never used a straight blade carving knife, you'll be amazed at the accuracy of your cuts with this knife. I don't know how I ever got along without it for my barbeque meats. Also, the holiday turkey meat and ham are a great use for this knife, once the meat is deboned. I would give it 5 stars, but the edge holding ability could be a bit better. I sharpen it before a carving session, and sometimes have to touch up the edge before the carving is finished. It's a pretty hard steel, but I've had other blades hold an edge better. Still, I don''t think you'll find a better value on a 12" carving knife.
I was skeptical to buy this because of the price, but it was best decision ever. Easily slices through whole rib-eye loin (boneless), and is easily sharpened.
I have used this slicer several dozen times now, and have gotten excellent results. It gives a very clean and thin slice - I have used for turkey, hams, and roasts. The handle fits nicely in my hand, and the blade is well weighted.

I LOVE this knife. I wasn't expecting such high quality given the very reasonable price, but I love it. I initially purchased it because I've been using a smoker to make my own bacon as well as brisket. This knife allows me to cut long, lovely slices of large cuts of meat. I also use it to slice whisper thin slices of tomato - goes through them like butter. I use it to slice bread as well. Don't be fooled but its delicate appearance! Should the knife slip, it will cut you easily. I don't want to talk about it.....;-). I will probably buy another one, but smaller for smaller foods....
I purchased this for home use to carve roasts, smoked meats, and bigger steaks. This was the best price found anywhere...by a lot!! Another use for this knife I have found is for cutting sushi. I am able to take regular sized pieces and cut them in perfectly in half for my toddler to eat.
I really enjoy my Victorinox slicer. Directed to get it by Cook's illustrated and the best price was found here. If you want a best in class slicing knife, this is it.

I purchased the slicing knife after I purchased the 8" chef's knife I wasn't sure I would like such a long knife but when I used it on a flat boneless ham, I was Sold! I was able to get thin slice with out any effort Great tool. Lois G
