in short, this is an excellent pan. Vollrath has always made good products. We have many of their mild steel pans for high temp searing, but the stainless is better for deglazing and thickening juices, Vollrath make two levels of SS pans. This one, made in China, is quite sufficient for most applications. The US made one is significantly more pricey and may handle even higher temps, but they are not meant to sit empty on the burner for extended periods of time. One odd thing though: the pan's dimensions don't exactly line up with the available lid-10 15/16 vs. 11- but it's all good cause they fit well. Great buy and will get more as needed.

No problems with this pan to date. I like the large handle because I have big hands. It doesn't get hot either. However, it seems slightly unsafe that the pan can tip toward the handle if not fully supported by a flat hard surface. I definitely recommend buying the matching cover.
