Enable your knives' peak performance with this Mercer Culinary M15952 combination sharpening stone. This dual-sided stone features a 1000 grit surface on one side and a 3000 grit surface on the other for a quick and convenient tool to maintain the edges on your already sharp knives. The white 1000 grit side allows the user to hone the edge created by a coarse stone (sold separately), while the blue 3000 grit side provides the finishing touch to an already sharp edge.
This stone comes with a rubberized base holder that creates a non-skid surface to keep the stone in place during sharpening. It also prevents damage to work surfaces in your commercial kitchen. Designed with your long-term use in mind, this combination sharpening stone boasts a high-grade corundum construction.
Customers appreciate the sharpening stone for its compact size, ease of use, and effectiveness in sharpening knives. The dual grits offer versatility, with the 1000 grit being ideal for regular sharpening and the 3000 grit seen as a bonus. It's considered a good value for the price, and the inclusion of a rubber base is well-regarded.

I chose this non-premium stone because deep down in the fine print Mercer actually recommends oil instead on their "premium" water stone (but just water for this one). Note that the stone is quite heavy and ships in a big box with everything else from the same warehouse, so I would advise strategically separating orders to prevent the stone from damaging or becoming damaged by something else.

Very good stone for the price point. Soaking is pretty quick and the 1000 grit is great for regular job. 3000 is too fine for most use so it is really a bonus.

I've tried the electric sharpeners and they are better than nothing, but don't get the knife all the way. I would recommend a stone with around 800-1200 grit for regular sharpening. The 3000 grit side is just a bonus for me.
